  • 3 ancho peppers
  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cut into cubes)
  • 2 teaspoons cumin
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeño peppers (chopped)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2.5 cups water (+ more as needed)
  • 2 tablespoons masa harina (for thickening if desired)
  • 1 tablespoon brown sugar

Instructions

  1. Toast dried peppers in a dry pan for 1-2 minutes per side; cool, remove stems and seeds.
  2. Soak toasted peppers in hot water for about 20 minutes until soft.
  3. Blend soaked peppers with some soaking water and salt until smooth; set aside.
  4. Season cubed beef with cumin, salt, and pepper; sear in a pot with olive oil until browned.
  5. Sauté chopped onions, jalapeños, and garlic in the same pot until softened.
  6. Return the beef to the pot; stir in chili paste and cook for another few minutes.
  7. Add beef stock and water; bring to a boil then simmer covered for about two hours.
  8. Adjust thickness with more water if necessary; taste and season before serving.
