  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 4 tbsp butter, divided
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1 cup chicken broth
  • 8 oz cream cheese, softened
  • 1 cup mozzarella cheese, shredded, plus extra for topping
  • 1/2 cup grated Parmesan cheese
  • 1 lb rigatoni pasta
  • Salt to taste

Instructions

  1. Cook rigatoni according to package instructions until al dente. Drain and set aside.
  2. In a bowl, toss chicken with Cajun seasoning until evenly coated.
  3. In a large skillet, melt 2 tbsp butter over medium-high heat. Add chicken and cook until golden brown (6-8 minutes). Remove from skillet.
  4. In the same skillet, melt remaining butter and sauté garlic for about 1 minute.
  5. Whisk in flour to form a roux, cooking for 1 minute.
  6. Gradually add milk and chicken broth while whisking to prevent lumps. Bring to a simmer.
  7. Stir in cream cheese until smooth, then add mozzarella cheese until melted.
  8. Combine cooked pasta and chicken in the sauce, stirring to coat thoroughly.
  9. Transfer to a baking dish and top with extra mozzarella. Bake at 375°F (190°C) for 15-20 minutes until bubbly.
