  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional: 1/3 cup white chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin.
  2. In a small bowl, whisk together flour, baking powder, salt, and spices until well combined.
  3. In a large bowl, mix melted butter and brown sugar until smooth. Stir in the egg and vanilla extract.
  4. Gradually add dry ingredients to the wet mixture; stir until just combined.
  5. If desired, fold in white chocolate chips or nuts.
  6. Spoon batter into muffin cups, filling each about three-quarters full.
  7. Bake for 10–12 minutes or until tops are set and a toothpick comes out with moist crumbs.
  8. Cool in the pan for about 5 minutes before transferring to a wire rack.
