  • 1 cup cake flour (or all-purpose flour sifted 23 times)
  • 1/2 cup granulated sugar (divided)
  • 1/4 cup powdered sugar
  • 6 large egg whites
  • 1/4 tsp cream of tartar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup whole milk, warmed
  • 4 tbsp unsalted butter, melted and cooled

Instructions

  1. Preheat your oven to 325°F (165°C) and prepare an 8-inch round cake pan.
  2. Sift together cake flour, half of the granulated sugar, and powdered sugar; set aside.
  3. Beat egg whites with cream of tartar and salt until soft peaks form; gradually add remaining sugar until stiff peaks form.
  4. In another bowl, whisk warmed milk and melted butter; fold into the flour mixture until smooth.
  5. Gently fold in the whipped egg whites in three additions.
  6. Pour batter into the pan and bake for 35-40 minutes until a toothpick comes out clean.
  7. Allow cooling before serving.
