  • 4 tbsp cold unsalted butter, cubed
  • 1 cup crumbled goat cheese
  • 2 tbsp fresh dill, chopped
  • 1 small onion, finely chopped
  • 1 tbsp olive oil
  • 3/4 cup milk (plus extra for brushing)
  • 1 large egg

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. In a frying pan, heat olive oil over medium heat and caramelize the chopped onion until soft and golden brown; set aside to cool.
  3. In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in goat cheese, dill, and cooled onions.
  6. In another bowl, whisk together milk and egg; pour into dry ingredients and mix gently until just combined.
  7. Turn out dough on a floured surface; pat into a round about 1-inch thick.
  8. Cut into wedges and place on the prepared tray; brush tops with milk.
  9. Bake for 15–18 minutes until golden brown.
