  • 1/4 cup heavy cream (or half and half)
  • 8 large fresh basil leaves (roughly chopped)
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • Kosher salt and freshly ground black pepper (to taste)

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium-high heat. Sauté minced garlic for about 30 seconds until fragrant, then add sliced onion and cook until translucent, about 8 minutes.
  2. Stir in the San Marzano tomatoes with their juice, chicken stock, and sugar. Bring to a low simmer and cook uncovered for approximately 12 minutes until slightly thickened.
  3. Add heavy cream, chopped basil, dried oregano, crushed red pepper flakes, and season with salt and black pepper to taste.
  4. Use an immersion blender to puree the soup until smooth or carefully transfer to a regular blender in batches.
  5. Mix in shredded parmesan cheese if desired and serve hot, garnished with croutons.
