  • 1 medium zucchini, coarsely chopped
  • 1 ear corn, kernels removed
  • 1/2 medium red bell pepper, finely diced
  • 3 green onions, thinly sliced
  • 1 large egg, lightly beaten
  • 1/2 cup panko bread crumbs
  • 2 tablespoons fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons olive oil for searing
  • 1 pint cherry or grape tomatoes, quartered
  • 1/3 medium seedless English cucumber, finely diced
  • 2 green onions, thinly sliced
  • 1/4 cup fresh cilantro, finely chopped
  • 1 clove garlic, minced
  • zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • pinch salt

Instructions

  1. Prepare the yogurt sauce by mixing Greek yogurt, lemon zest, lemon juice, minced garlic, olive oil, and salt in a small bowl. Refrigerate until serving.
  2. Preheat your oven to 425°F (220°C).
  3. In a large bowl, combine ground chicken, zucchini, corn kernels, red bell pepper, green onions, beaten egg, panko bread crumbs, cilantro, minced garlic, cumin, coriander, salt, and black pepper. Mix gently until just combined.
  4. Shape the mixture into evenly sized patties.
  5. Heat olive oil in a frying pan over medium heat and sear each patty for about 2 minutes on each side until golden brown.
  6. Transfer the patties to a baking sheet and bake for 7 to 10 minutes until cooked through.
  7. Prepare the tomato-cucumber relish by combining tomatoes, cucumber, green onions, cilantro, garlic, lemon zest, lemon juice, and salt in a bowl. Stir gently.
  8. Serve hot with yogurt sauce and relish on top.
