  • 1 cup finely grated carrots (about 2 medium carrots)
  • 1 cup chopped pitted dates

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round or square baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, beat together oil, brown sugar, and granulated sugar until smooth. Add eggs and vanilla; mix well. Stir in yogurt or sour cream.
  4. Gradually fold dry ingredients into the wet mixture until just combined.
  5. Gently fold in grated carrots and chopped dates.
  6. Pour batter into the prepared pan and smooth out the top. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
